Menu plan, May 26 – June 1


Holiday weekend means lots of extra meals to plan!

Sunday lunch: Chicken & rice, stir-fry veggies from farmer’s market (I’ll be looking for asparagus, bok choy, etc.)

Sunday dinner: Grilled pork chops, baked potatoes, grilled veggies

Monday lunch: Picnic lunch! (Sandwiches, sliced veggies, chips)

Monday dinner: Chickpea Wraps, Greek salad w/ tomato, feta & olives

Tuesday:  Enchiladas for potluck dinner with church group

Wednesday: Leftovers

Thursday: Quick dinner out (or pack up leftovers) for dinner before evening meeting

Friday & Saturday:  Traveling!

    • We still mostly just have greens at our farmer’s market these days — the lines for the few stands with asparagus and strawberries were crazy long (but worth it). I’m just hoping I actually have good luck in my own garden this year.
