Holiday weekend means lots of extra meals to plan!
Sunday lunch: Chicken & rice, stir-fry veggies from farmer’s market (I’ll be looking for asparagus, bok choy, etc.)
Sunday dinner: Grilled pork chops, baked potatoes, grilled veggies
Monday lunch: Picnic lunch! (Sandwiches, sliced veggies, chips)
Monday dinner: Chickpea Wraps, Greek salad w/ tomato, feta & olives
Tuesday: Enchiladas for potluck dinner with church group
Thursday: Quick dinner out (or pack up leftovers) for dinner before evening meeting
Friday & Saturday: Traveling!
