There has been a slight chill in the air in the evenings, and it finally feels like fall is drawing near. It’s my favorite season! I’m not a pumpkin-spice-latte obsessive, but I do love all things pumpkin- and cinnamon-flavored in the fall. And it doesn’t hurt that two of my favorite healthy-eating blogs posted pumpkin cookie recipes last week!
Normally I don’t make desserts for weeknight meals, but we’re hosting a college life group this fall, and I know the kids kind of expect it. Plus, everything I’m serving is pretty healthy, so I figure a little treat won’t hurt.
Here’s the recipe. My mods: The recipecalls for 3/4 c. of sugar, which really isn’t that much, but I used 1/2 c. sugar and 1/4 c. molasses instead. I used dark chocolate (60% cacao) chips. I used white whole-wheat flour, but I think these would probably turn out well with almond flour substituted for all or part of the wheat flour.
Also – yes, the cookies really ARE that orange (several of the college kids commented on it) and they didn’t flatten out at all when they baked. So, I guess what I actually made were weird, orange, delicious little cookie balls.
